To get the recipe rolling, first you will need to set your oven to a preheat temperature of 350 degrees Fahrenheit, or 175 degrees Celsius. Next take out your food processor, and grind into a powder the Saigon cinnamon, unbleached white baking flour, quick oats, baking soda, and table salt. Place your ground and sifted flour base into a large mixing bowl. Next bring out your electric mixer, and gradually beat together the flour base, dark brown baking sugar, unsalted butter, large fresh whole egg, and cold low fat milk. Once your animal cracker dough is firm and stiff, roll it into two large balls on a flour dusted clean surface. Next roll out the balls into quarter inch thick dough disks, then cut up the dough using your animal cracker cutters. Place your finished pieces onto a nonstick baking sheet, making sure the crackers are lined up one inch apart.
