Matt from Windermere Florida recently mailed me this original animal crackers recipe. For step one you will want to cream your softened real unsalted butter. Next gradually whip in the vanilla extract, whipped cream, white sugar, large whole shelled egg, pure baking powder, table salt, fresh squeezed lime juice, pure baking soda, and white all purpose baking flour. Stir the ingredients together fervently until a nice stiff dough clump forms. Roll your dough into a ball or sphere shape, wrap it in wax baking paper, then chill it in the refrigerator for two hours. Once chilled take the dough ball out, and flatten it with a rolling pin on a clean and flour dusted surface. You will want your flattened dough thickness to be one eighth to a quarter inch. Next take out your animal cracker cutters, dip them in some white flour, then use them to make your animal shapes. Place these animal crackers on to a greased cookie sheet, lining them up in neat rows with the crackers one inch apart. Lastly you will want to slide the crackers into the oven set at 350 degrees Fahrenheit, or 175 degrees Celsius. Let them bake for eight to thirteen minutes, or until they look crisp and lightly browned. Set them on wire wracks to cool for at least twenty minutes before eating them.
